Raisins

Raisins are dried fruits that are obtained as a result of drying the grape in the sun, making it possible to keep it for a longer time by reducing its humidity and making its flavor more intense.

They are especially healthy as they are sources of fiber and carbohydrates, such as natural sugars, but also minerals such as potassium, calcium, iron and magnesium. These can be eaten alone, making an excellent appetizer, but can also be included in salads, couscous, muesli, breads and cakes.

Sultana Raisins

Sultana raisins are characteristically small, sweet and golden in colour. To achieve this result, once harvested grapes are immersed for 20 seconds in a solution consisting of water, a food grade vegetable immersion oil and potassium carbonate.

This procedure creates small cracks on the surface of the grapes, which speeds up the drying process. Finally, the submerged grapes are placed out in direct sunlight and depending on the weather, drying takes about 7 days.

Golden Raisins

Golden raisins get their name from their characteristic golden hue. This is the result of the process to which they are subjected and that allows them to retain a brighter colour and greater humidity. Once harvested, the grapes are immersed for 20 seconds in a solution consisting of water, a food-grade vegetable immersion oil, and potassium carbonate.

While submerged, the grapes are exposed to sulphide dioxide to preserve colour. Finally, they are left to dry in the shade, guaranteeing air circulation, and drying takes about 20 days.

Green Raisins

Green raisins, whose origin is in the Middle East and Central Asia, are characterized by their greenish hue, due to the fact that they are made with green grapes, fineness and their slightly dense and chewy texture. To achieve this result, once harvested grapes are immersed for 20 seconds in a solution consisting of water, a food grade vegetable immersion oil and potassium carbonate.

This procedure creates small cracks on the surface of the grapes, which speeds up the drying process. Finally, they are left to dry in the shade, guaranteeing air circulation, and drying takes about 20 days.
